Extra Tart Springtime Lemon Cake with Lemon Butter Icing

Ingredients

3/4 cup butter, softened
2 cups sugar
4 eggs
3/4 cup sour cream
1/2 cup milk
1 1/2 lemons grated  Use fruit, juice and peel.  (remove large membrane pieces)
3 cups flour
2 tsp. baking powder
1 cup chopped pecans
1 cup blueberries (optional)

Directions

Beat together first 6 ingredients until blended.  Combine and add the remaining
ingredients, and stir until blended.  Do not over mix.
Spread batter into a greased 10" tube pan, and bake in a 325 degree oven for
1 hour.  Cool in pan.  When cool, brush top with Lemon Butter Icing.

Lemon Butter Icing

1 tbs. butter, at room temperature
2 tbs. lemon juice
3/4 cup sifted powdered sugar

Stir together all the ingredients until well blended.  Spread on top of the cake
and decorate with Lemon Zest.

This is a basic lemon cake, tart and lemony, and dense as a pound cake.  You  can add
a cup of blueberries as a lovely addition.  Stir these in, and at then end with the flour.
