Pumpkin Cookies

Ingredients

4 cups all-purpose flour
1 cup rolled oats
1 1/2 teaspoons baking soda
2 teaspoons ground cinnamon
1 teaspoon salt
1 1/2 cups vegetable shortening
1 cup granulated sugar
1 cup packed light brown sugar
1 large egg
1 teaspoon vanilla extract
2 cups solid-pack pumpkin

Directions

Preheat oven to 350 degrees.  Combine the flour, oats, baking soda, cinnamon and salt.
In large bowl, cream together the vegetable shortening and two sugars.  Beat in the
egg and vanilla extract.  Beat in the pumpkin.  Gradually blend in the dry ingredients.

Drop the dough by spoonfuls 2 inches apart onto ungreased baking sheets.  Bake for
18 to 20 minutes, until lightly colored.  Transfer to wire racks to cook.  Drizzle vanilla
icing, if desired.  Melt frosting in microwave.
