Green Enchiladas
Ingredients
1 pound ground
beef
1 medium onion, chopped
1 (10 oz.) package cheddar cheese, grated
1 pkg. flour tortillas
1 can cream of chicken soup
1 can cream of mushroom soup
1 soup can water
1 package onion dip mix
1 small can jalapeno peppers, chopped
1 lb. Velveeta cheese
Directions
Brown ground beef
and onions. Remove from heat and stir in grated cheddar
cheese. Place some of the meat mixture on tortillas and roll to form
each
enchilada. (tortillas roll better at room temperature.) To
prepare enchilada
sauce, combine the remaining ingredients and cook over low heat until
smooth
and creamy. Pour over enchiladas and bake in a covered dish for 15
to 25 minutes
at 325 degrees.
