Light Chocolate Éclairs

Bandit is more than willing to sample any and all of these to
make sure they are safe to eat.

Ingredients

2 packages of Sugar free vanilla instant pudding
(made according to package directions)
:Low fat whole graham crackers
8 oz. Light Cool Whip
3 Tbsp. Cocoa
2 cups powdered sugar
2 Tbsp. milk or more to make icing spreadable

Directions

Make pudding according to package directions.  Set aside.  Line a 9x13 inch pan
with the whole graham crackers.  Cut to fit.  Fold Cool Whip into pudding.  Pour
half of the mixture on crackers.  Make a second layer of crackers.  Pour
remaining pudding mixture on crackers.  Top with another layer of crackers, spread
with the chocolate icing.  Refrigerate.  Best if made a least a day in advance.
