Crusty Peach Dessert
Ingredients
2 1/2 cups sliced
peaches
1 1/2 tsp. lemon juice
1/2 tsp. grated lemon rind
1/2 tsp. almond extract
1 cup flour
2 tsp. baking powder
1/4 tsp. salt
1/4 cup shortening
1 egg, well beaten
Directions
Drain peaches,
reserving syrup; arrange in greased 8-inch square pan.
Combine 1/4 cup reserved syrup, lemon juice and rind and extract;
sprinkle over peaches. Heat in oven while preparing dough.
Sift
dry ingredients into bowl; stir in shortening, egg and 1/3 cup peach
syrup.
Stir until dry ingredients are moistened. Drop dough from tablespoon
over
mixture and spread with spatula. Sprinkle with 2 tablespoon
additional
sugar. Bake at 350F for 30 minutes. Serve with plain or
whipped cream. |
