Delmonico Potatoes
Ingredients
1 1/2 lbs
potatoes (5-6 medium)
2 Tbsp. butter
2 Tbsp. flour
1 cup milk
1/2 tsp. salt
1/4 tsp. white pepper
1/4 tsp. nutmeg
1/4 cup pimento (optional)
1/2 cup dried breadcrumbs
1/4 cup butter
Directions
Peel potatoes and
dice into 1/2" pieces. Boil in boiling, salted water for 15 minutes.
Drain.
While potatoes
cook, melt the butter in a saucepan. Add flour and stir into a
paste; cook
for 2 minutes over low heat.
Add the milk and
stir; simmer until thickened. Add seasonings and simmer 2 more
minutes.
Blend in the pimento (if using).
Swirl sauce
through drained potatoes, then pour into greased casserole dish.
Sprinkle
with breadcrumbs and dot with butter.
Bake in oven at
350 degrees F for 30 minutes.
