Lemon-Frosted Coconut
Bars
3/4 cup butter
or margarine
1 3/4 cups brown sugar
1 1/4 cups flour
2 eggs
1 tsp. vanilla
1 tsp. baking powder
1/2 tsp salt
1 cup flaked coconut
1/4 cup finely chopped blanched almonds
Lemon Frosting
2 cups confectioners sugar
1/4 cup half and half or light cream
grated rind of 1 lemon
2 tsp. lemon juice
Cream butter or margarine and 3/4 cup brown sugar until light and fluffy.
Add 1 1/2 cups
flour and mix well. Press mixture evenly over bottom of 13 x 9 inch
baking pan.
Bake at 350 degrees for 10 minutes. Beat eggs, vanilla and remaining
1 cup brown sugar
until frothy. Sift together remaining 1/4 cup floor, baking powder
and salt. Fold into
egg mixture. Add coconut and almonds. Mix well. Spread
evenly over mixture in pan
and bake at 350 degrees for 20 minutes. Cool in pan.
